С помощью кинетической модели окисления β-каротина пероксидом водорода была дана оценка общей антиоксидантной активности водных и спиртовых экстрактов плодов 17 сортов яблонь, выращенных в условиях Южного Предбайкалья. Выделены сорта с высокими показателями антиоксидантной активности для использования в селекции.
