The results of research of a chemical compound of extractive substances of cedar needles and florence water which are used in the food-processing industry are presented. Studies have shown that an extract of cedar needles and florence water contain a significant amount of biologically active components. In particular, cedar needles extract contains a 30% of flavonoids which possess the antioxidant activity; florence water contains a significant amount of α-terpeniol which shows fungicidal properties.
